  1. Preheat & prep
    Preheat oven to 400 °F and line a baking sheet with parchment paper.
  2. Cook beef
    Sauté onions and ground beef in avocado oil over medium-high heat (~7 min), then drain any excess fat (leave ~2 tsp).
  3. Season beef
    Add spices, tomato paste, and green chiles. Cook until well combined (~1–2 min).
  4. Assemble tacos
    Lightly fry each tortilla in oil, fill with ~2 Tbsp beef, top with ~2 Tbsp cheese, fold, and place open-side-up on baking sheet.
  5. Bake until crispy
    Brush with oil if needed. Bake until golden and cheese is melty (~10 min).

Add toppings
Let cool slightly before filling with lettuce, tomato, cilantro, hot sauce, and lime.
