Ingredients (Serves 4)
- 1 lb ground beef
- ¼ cup finely diced white onion
- 1 tsp kosher salt & ½ tsp black pepper
- ½ tsp each chili powder, garlic powder, onion powder, cumin, oregano
- 1 (4‑oz) can diced green chiles (hot or mild)
- 1 tbsp tomato paste
- 8 grain‑free or regular tortillas
- 1 cup freshly shredded sharp cheddar cheese
For topping: lettuce, diced tomato, chopped cilantro, hot sauce, lime wedges
Directions
- Preheat & prep
Preheat oven to 400 °F and line a baking sheet with parchment paper. - Cook beef
Sauté onions and ground beef in avocado oil over medium-high heat (~7 min), then drain any excess fat (leave ~2 tsp). - Season beef
Add spices, tomato paste, and green chiles. Cook until well combined (~1–2 min). - Assemble tacos
Lightly fry each tortilla in oil, fill with ~2 Tbsp beef, top with ~2 Tbsp cheese, fold, and place open-side-up on baking sheet. - Bake until crispy
Brush with oil if needed. Bake until golden and cheese is melty (~10 min).
Add toppings
Let cool slightly before filling with lettuce, tomato, cilantro, hot sauce, and lime.
